Brie Vinaigrette
Serves 4
1/4 cup olive oil
1 pound French Brie, cut into 8 pieces, and brought to room temperature
4 eggs, beaten
1 cup bread crumbs
2 cups olive oil
1 cup balsamic vinegar
3 teaspoons fresh parsley, finely chopped
2 shallots, chopped fine
1/4 teaspoon fresh ground black pepper
In a large, heavy skillet place the i/. cup of olive oil and heat it on medium until it is hot.
Dip Brie into the eggs, and then the bread crumbs. Do this several times, until a thick crust is formed.
Fry the Brie on both sides until it is a golden brown.
In a small bowl whisk together the vinegar, the 2 cups of olive oil, parsley, shallots, and pepper.
Pour some of the vinaigrette in small individual serving bowls. Place two pieces of the fried Brie on top.
